Brief Description : An opportunity to get creative and assist the Senior Chef on duty with storage, preparation and cooking of all food items for the Shepherd Hall restaurant, St Thomas' Hospital, Southwark.

 

Qualifications Required : GCSE English and maths Grade C/4 or above or L2 English and maths Functional Skills desirable but not essential, Maths and English will be assessed as part of the interview process.
Food Safety Level 1, 2 or 3, desirable but not essential
Food Hygiene certificate, desirable but not essential

Shepherd Hall meets not just the day to day catering needs of diners in St Thomas' Hospital but also caters for events and banqueting on behalf of GSTT. Therefore they require chefs with a creative and decorative interest in food and its presentation.

As a Commis Chef you will be involved in assisting and monitor food stocks and stock movement; understanding daily departmental costs and how they influence profit and loss results; ensuring minimum kitchen wastage; learning and recording skills and recipes from other members of the department; follow the cleaning schedules for the kitchen and clean the section and other areas as
directed; ensuring stock is controlled and rotated; accepting and store deliveries.

Along with learning the trade whilst working in the kitchen you will be working towards gaining your level 2 Commis Chef Qualification.
